بررسی تغییرات چربی های سرم و شاخص های سلامتی ماهی قزل آلای رنگین کمان (Oncorhynchus mykiss) تغذیه شده با جیره های حاوی روغن های گیاهی جایگزین روغن ماهی

چکیده

در این تحقیق اثرات جایگزینی روغن ‌های گیاهی مختلف به ‌جای روغن ماهی جیره غذایی بر ترکیب اسیدهای چرب فیله، چربی ‌های سرم و شاخص ‌های سلامتی ماهی قزل‌ آلای رنگین‌ کمان مورد بررسی قرار گرفت. برای این منظور پنج جیره غذایی ایزونیتروژنیک و ایزولیپیدیک با منابع مختلف روغن شامل: روغن ماهی (جیره 1)، روغن سبوس برنج (جیره 2)، روغن بزرک (جیره 3)، روغن سویا (جیره 4) و جیره 5 حاوی مخلوط روغن‌ های ماهی، سبوس برنج، بزرک و سویا با نسبت 1:1:1:1 تهیه شدند. بدین منظور، تعداد 450 عدد ماهی 1±90 گرمی ( توزیع شده در 15 مخزن) به ‌مدت 15 هفته تغذیه شدند. ترکیب اسیدهای چرب بافت انعکاس دهنده ترکیب اسید چرب جیره بود. بیش ‌ترین و کم ‌ترین میزان امگا 3 به ‌ترتیب در بافت فیله ماهیان تغذیه شده با جیره حاوی روغن بزرک و روغن سبوس برنج بود. بیش ‌ترین و کم ‌ترین میزان اسیدهای چرب 6-n  به ‌ترتیب در بافت ماهیان تغذیه ‌شده با جیره‌ های غذایی حاوی روغن سویا و روغن ماهی  بود. بیش ‌ترین نسبت 6-n-3/n (شاخص مطلوبیت سلامتی غذا) مقادیر 0/91 و 0/89 به ‌ترتیب در ماهیان دریافت کننده جیره 3 و جیره 1 بود. با وجود عدم اختلاف میزان کلسترول تام و تریگلیسرید لاشه در تیمارها، مقادیر آتروژنز و ترومبوژنز در تیمارهای مختلف اختلاف معنی ‌داری را با هم نشان دادند (0/05>P). با این وجود در محدوده قابل قبول از نظر اثرات سلامت بخشی و امنیت غذایی بودند. تهیه منابع ارزان چربی در تولید خوراک ماهی ضمن تامین شاخص ‌های سلامتی غذا از طریق ترکیب مناسب روغن ‌های گیاهی و روغن ماهی امکان ‌پذیر است.

چکیده [English]

The aim of the present study was to determine the impact of replacing the fish oil by alternative lipid sources in diets for rainbow trout (Oncorhynchus mykiss) on fatty acid profiles of muscle, serum lipids and health parameters. Five isonitrogenous and isoenergetic semipurified diets were formulated containing pure fish oil (FO) as diet1 that compared to four diets: 100% rice bran oil (RBO, as diet2), 100% linseed oil (LO, as diet3), 100% Soybean oil (SO, as diet 4) and a 1:1:1:1 rice bran, linseed, soybeen and fish oil mixture (MX, as diet 5). For this, 450 fish with an initial weight of 90 ± 1g (distributed in 15 tanks) fed for 15 weeks. Fillet fatty acid composition reflected dietary fatty acid composition. The highest and lowest levels of n-3 PUFA concentrations were recorded in fish fed the LO and the RBO diets respectively. Also, the highest and lowest levels of n-6 PUFA concentrations were recorded in fish fed the SO and the FO diets respectively.The highest n-3/n-6 ratios (an indicator of food healthy),amounts 0.91 and 0.89, were in fish fed the diet3 and diet1 respectively. The difference in cholesterol and Triglycerides content of the diets seems to be too low and there were statistically significant differences in the IT and IA of muscle from diets with different lipids (p<0.05). Whereas in respect to nutritional point of view and food safety, they were in acceptable range. Providing of cheap lipid sources in fish food production, in accordance with food healthy and safety, is possible by an appropriate combination of vegetable and fish oils
